I prefer Bob myself. Can't really say why but that is always what I buy.

Both are great, but BB are easier to prep, quicker to cook 4 vs 6 hrs (ish) and are leaner.

I have had a stronger track record with my baby's too. Tough call - as long as you cook them well nobody will ever complain!

I like them both and buy whatever is on sale. Love to eat them both. BB have more of a milder pork flavor but the spares taste more like ham. I always trim spares down to St Louis cut but then cook the end pieces right along with it. Seems like extra work, but they seem to cook up more evenly that way.

I used to cook a lot more BBs than spares because they were easier for me to cook them right. Once I quit using a rib rack, all the problems with getting spares right went away.

I prefer BB's for the ease of cooking and less fat. I like to cook spares too and trim the tips. If I catch a good sale on spares, then it's spares I'm cooking. If I want to splurge then it's BB's.

I only cook BB's if a get a very specific request for them. Even then I try to steer them to spares.

Default Spare me all the drama

I like both. But I only buy and cook spares because they contain more meat. I usually don't even trim them and everybody seems to be happy with them that way. I also never steam or boil them before cooking or foil them to finish them off. My father in law steamed his ribs and they were always good. I am a more primative cooker and use only spices, heat and a little smoke. I would be happy to fix baby backs but I just never have.

Thumbs up

I nearly always cook baby backs. The only reason I can come up with: I love them!

I usually go with spares trimmed up. I like the flavor better.
