Alright ladies and gents. The Brethren have spoken. This week it will be the shoulder, I'm gonna go pull it out of the freezer now and get it into a bucket of water in the fridge so it's ready to go on Sunday.

Brian, I might just take your advice and fire up the drum. It's been sitting on the side of the house for a while feeling neglected, time to check it out and see if its still in cooking shape.

I also found a package of pork skin in the freezer from my Christmas ham so I'm thinking that it's cracklin time as well.

It was very nearly the shoulder on more than one occassion. Luckily I have ninja like reflexes and was able to judo chop it back into place when it came flying out at me.
