I agree that the basket can't be too big. I also do not believe this is causing the problem. My Charcoal basket is round, 19 inches, and 15 high. That is mammoth. I do have a 2 inch band at the bottom and the top so I am not sure if that has anything to do with it but starting with 12 or so coals my UDS, equipped with just ONE 1 inch valve, so far, does. not get out of control and get up to 300 unless I open it all the way.

Use a diffuser or if you are you can always use a bigger one. You will go through a lot more charcoal but its easier to control.

If you're letting it get to 300 it'll take a bit of time to get it back down.

As said, try lighting less coals to start with. Let the drum come up to temp SLOWLY and shut down the intake when it's about 5 degrees from your target temp. If I want mine to run at 225 I have to almost close off my intake valve completely, or at least BARELY crack it open.


You'll figure it out.
