So, I'll be cooking for her suprise party, which she already knows about.
Anyhow, I've done chuck rolls, butts, whole fryers, green chile casseroles, brisket etc. I'd REALLY like to try something different! Gear is no problem. Between all the stuff I have and family, I can get access to just about anything. Not to mention I still have Grillzilla and can grill a feast on that thing at once. I should be able to grill, if needed, on site. On the invite list is 100 peeps, I doubt all will show, but will still 70 + or so. I have until the 29th to set the menu. I've got the main course and family will take over all the sides and dessert.I'd REALLY like to crank out a few trays of this stuff, BUT kicked up a few thousand notches! http://www.bbq-brethren.com/forum/sh...ht=PatioDaddio Help a Brother out! Well it only follows that Panzilla needs to be born to make that much pizzghetti!
How about some sort of fusion tacos - like Korean bulgogi tacos or something? A little different, a little familiar, plus great for feeding a crowd. Can't go wrong with a massive chicken cook either. Happy birthday to your special lady!

In Tenn. There is a place famous for Red Neck Tacos. Johny cakes or (corn Pancakes) with pulled pork or beef dressed with slaw and whatever the choice of sauce. Those are fun & EZ. You serve them in paper boats and they can be big or small. Appetizer or Main. Good luck and tell her Happy Birthday for me!

I just love carne seca enchiladas.
Not sure what I'd do with 70+ peeps. I don't care for them when they're fresh, and don't see why you aged them 8 months. Good thing is they don't expire.

Well break out in a stanza of "The Olde Gray Mate Aint What She Used To be"and Trade her in on a Pair of 20 yr olds. Oh Sorry I was having a flash back.
Chicken Leg Qrtrs 5 bags ought to git er done. PItmaster T's Beans, Easy mac & cheese (Pasta & cheese sauce) and a Bucket of Slaw from Sams PIck it up with the Cheese sauce, pasta. & stuff to make the beans. With charcoal you'll be out of pocket less than 2 Frainklins. + liquor.

How about a couple of Big Arse NY SirLoins for the party with a Horseradish dill sauce for the Entree meat. This gives you an opportunity to socialize whilst the meat is cooking.

CARNITAS!
It's still pork butt, but with a twist! Make up some chili verde put out plenty of "fixins" and TA-DAAA! It' s my newest favorite thing that I order at Mexican restaurants around here. Chicken wangs are also great and won't take so long. (about an hour). You could put out a few different varieties. OR....just grill/direct smoke em all with a simple salt/pepper/garlic seasoning and then just toss em in different sauces to make it even easier on the cook. These could be done in batches too if you want. Happy Birthday Mrs. Brisket!

How bout a pig in a pit, use grillzilla for onions, peppers, tortillas etc. Everyone can build their own. When I cook for that many people, it's easier if I have one large hunka meat (like a pig).... then I can enjoy the party and not spend time babysitting small portions. (yes I'm lazy).. Good luck with what ever you do Bob, I'm sure Mrs B will love it! .
