Default Can you "cooler" a brisket too long?

I did two flats over night, and one was done a few hours before the other. First one has been wrapped in a towel and coolered the last couple hours, and the second one just went in. Should I take the first one out and slice it up. The plan is for supper tonight.

Nope, a brisket cooled to about 140 degrees will be way juicier than one just taken off the pit. Mine usually sit in the cooler 4-6 hrs @ comps

You will be fine. I had a brisket cook way faster than expected once and held it for 7 hours. Ended up 8th place with it, I was floored.

If you like Nun brisket ( all Dried up) slice it all up. If you want it juicy like a cheerleader with hot pants slice it as you need it,.
