Here goes my first overnight pork butt on my new UDS. Happy birthday meal for good ol ma

11 lb butt ready to go

Got that sweet blue going

Got the baked beans ready to go too

I'm sure you're already read this somewhere, but you can crank up the heat and cook a butt in 6 hours with no ill effects.

No need to overnight it.

If it was diner I would have, but need to make sure it is done by noon.
