Ive done Hickory and Apple. It was awesome. I am going to do Oak next and see how that is.

French Oak Wine barrel staves are the best smoke for Prime Rib/Ribeye roasts.
  Maple Mojobricks aren't bad either.

Did mine last year with mesquite. LOVED it. Of course, I really like mesquite with beef. Oak ain't too bad either. If you can find some Jack Daniel's barrel stave chunks it would be even better. (I've been known to pay the exhorbitant cost for their little briquette bags just to get those chunks...)
