I am cooking a Fatty (Just a pound of JD rolled in my pork rub) I am seasoning my UDS at the same time. I put the fatty on when I got the UDS stabilized at 225 F. But it reached 160 F after 45 minutes. Some say to cook to temp and some say to cook 2-3 hours. What do you suggest?

I normally cook to temp for fatties. I go to 165. 45 minutes seems very fast at 225.
