I wanted to post this yesterday, but Brethren web service has been sketchy since yesterday morn out here, so I'm getting to it this evening. One of the local markets had beef chuck short ribs on sale this week. I've been wanting some beef ribs for a while, so... I picked up 2 racks, trimmed a bit of the fat off, seasoned with SM Season All and SM Sweet and Spicey. Put them in the Bandera at 280* and about 3 1/2 hours later they were ready. Foiled and rested while I got some fries and salad ready.
