I always trim my Costco baby backs as I find they aren't too even and have a bunch of excess meat.
today i ground up some of the excess meat. I saw on Food network a small BBQ joint in TN that serves pork burgers from rib trimmings; i think they don't use any spices. not sure. I was thinking just salt and pepper but that may be a bit boring. Any thoughts on spices for making pork burgers? Should I cut in some ground beef?

Haven't done it before, but I would mix in whatever rub you use for your ribs. Sounds delicious!
