People asked me how low the temperature my smoker can keep.
A few days ago I tried it 50C for 10 minutes, 60C for 10 minutes, 70C for 10 minutes and 80C for 10 minutes. Yesterday I smoked 2 pieces of picnic pork. I set smoker temperature at 60C for 3 hours and then 70C for 7 hours I started it yesterday afternoon 3:30. I was awaken around 4:00 this morning by alarm as I set low temperature alarm at 50C. So indeedd total smoking time must be around 13 hours. Temperature fluctuation in most time is 1 C. When rising from 60C to 70C, temperature fluctuation occasionally is 2 C. Size of the mini-smoker is Grill size 34x25cm x 3 pieces. Effective grilling height or 30cm. Weight 36Kg. I used about 6 liters of broken charcoal, size under 3cm. Here are links to video. Cool videos all the way from China no less!
But man you need to watch those temperatures. Anything below 60C/140F is VERY BAD!! This can allow bacteria to grow fast and make you pretty sick. |

The Thermostat can be set like 60C for 3 hours, 70C for 3 hours, 80C for 3 hours and 100C for 1 hour. The flue is closed. Temperature is purely controlled by speed of blower, the speed of blower is controlled by thermostat.
P.I.D thermostat is very clever. It knows when to speed up or when to slow down the speed of blower. Thus temperature fluctuation is kept within 1 C degee. |
