This was my simple idea cart made of 2.25 maple (old bowling alley stock). This would give me up to 4 racks 6" apart. What is the pros to a offset to doing a upright with fire under.. This way I can grill hot and fast on right and low and slow on left? and thx for your input, This is a lot of stainless to mess up.

is 6" between racks enough room to really be able to get the racks in and out?

I was worried about getting the racks in and out and was thinking of using something like this http://www.swagelok.com/search/find_...part=SS-4-RB-2. And a eyelet bolt from the outside if needed

So would love more input would you do it different? If so why? I just want to get the most out of them, and the best Q. Also do you have to have a damper on the stack for cooking, I think the intake should do it.

Crazy what you can do when you read the directions, this its a 3lbs stainless pizza pan I found on ebay to use as a defuser if needed.
