I got these results with my upright gasser (Probably a smaller unit than yours). Cooked at 275 and I used Oak, apple and a little mesquite, layered in the coffee can mod to the chip box. You'll be fine:

All great advice. I can go into this with less trepidation now. Thanks for the infor on NZ beef NZrebel, something to note.
I guess I might start with apple wood and see how it goes.
