Scored two cases of Hatch chiles from the store. (.99lb) I had too much going on to roast them myself, so I let the chile guys do it this time. ( I'm a slacker). :oops::grin:

These were Young Guns Hatch Chiles. I bought 2 boxes of mild.

I bagged several for the freezer....

and canned a bunch of hatch green chile sauce for winter...

added the chiles to sauteed onions and garlic..

chicken stock and seasonings...

simmered to get the flavor and texture I wanted..made a slurry to thicken.

then into the sterilized jars...

into the pressure canner at 12lbs...

I've been eating this sauce with corn chips..

I'm enjoying the chiles. Hatch are one of my favorites and this batch from Young Guns has been pretty tasty so far.

A slacking Angel. I would have blistered my own chiles on the block pit but my "cookin' rake" was delegated to other areas of the farm. :oops:
