First time trying this in what I believe is the "right" way. I'm not really sure what cut this is. I tried to explain to the butcher (even with the meat cutter's cut code) which cut I wanted when we had our steer butchered, but he wasn't sure even then. Maybe time for a new butcher. ANYWAY, he labeled it "culotte" which I think is a sirloin top cap, but it looks like a rump cap or tri-tip??? Whatever it is, here's the plan:
Trim it up, slice with the grain for skewer strips, rub down with GOBS of garlic, some EVOO, sea salt, and fresh ground black pepper. Let that sit for 45 minutes or so.
Got a chimney full of red-hot lump, spread it out under the rotisserie, threw on some cherry chunks (I believe a wise man once said "Any wood is good for BBQ, as long as it's cherry"!), and park the meat over some SERIOUS open flame!
Needed the lid once or twice to knock down the flames! I LOVE how dark the old redheads get when they get hot! The spice cap in the pic is the color of the redhead when she's cool for comparison.
I'll let the meat speak for itself!
Caveman styled a few chunks after the turn for the wifey and baby! The other kids LOVE it rare like daddy!
When baby is happy, momma is happy! When momma is happy, daddy is happy! This was some melt in your mouth beefy goodness, going to do this one again REALLY soon! Thanks for looking!
