I charge $1.50 per side per person and cost in a 4oz serving ranges between $0.32-0.42. Is this what you are asking?

I'm close to what HBMTN has for cost. I use a 6oz serving and charge between $1.75-$2.00. You could go with 5oz servings just to make sure you don't run out.
