My second entry for the Memorial Day Weekend Throwdown share the name of two cities famous for good BBQ. I did a St. Louis trim on these spares, then smoked them Memphis style, aka dry. Dry rub only that is. The top ^ photo is the money shot for this post.
And I didn't forget the trim either, a few pieces didn't make it into this go-box. But these were delivered to a friend that was working Sunday.
