Smoked Rabbit?

A touch of cold smoking could give it flavour. Probably worth an experiment!!!
 
If I tried it I would probably brine in over night, then wrap it after it got a decent color to it. I also like the idea about the bacon, EVERYTHING'S better in bacon!!!!!
 
I was always told you shouldn't eat wild rabbit until after a couple hard freezes as the livers have a parasite. Don't know for positive if it's true or not.

Not sure if I would eat the rabbits in my back yard... St. Louis city isn't the most clean place in the world
 
Just stuff the rabbit into a huge fatty for smoking. Done and done! Cut end off the fatty and you have the rabbit coming out of the rabbit hole for dinner.
 
Down in we smoke them but then use them as ingredients in other dishes. Smoked rabbit gumbo for instance is really good.
 
Someone do this. I think it would be fine. They are lean, but so is pork loin, chicken breast, turkey, etc. A brine would probably help keep some moisture in. I am literally living in bunny country... they are taunting me.
 
I'd treat it like white meat chicken. Indirect to 155 deg.
