Strange pork butt

I recently bought a 2 pack of pork butt to smoke. Both cooked and smoked well, but one of the butts had a strange looking type meat in part of it. This section would not pull away like the majority of the butt. The strange meat was seemed grainy and tough. It was not fit to eat. Can anyone shed light on this and let me know if this common? I did not fine it in the first Butt I smoked.

Connective muscle tissue, were they boneless? If so butcher may have removed that from one.

BTW, No Pic's didn't happen. :wink:
 
Answer to strange Pork butt

They both had bones. The bone came out correctly, but the second with strange meat was hard to pull out. Sorry,I have no pictures.

Was it the thin layer of meat under the first section of the fat cap? Or was it inside (toward the center) of the butt? Wondering it it was tough because it may not have reached desired temp in the center.
 
The bad meat was other end, opposite where the bone was. It was fairly close to outer edge and ran 4 inches deep from there.

I don't know but I have had them with old wounds and scar tissue. Maybe a tumor?

Happens a lot with game. I had a backstrap from a deer once with a broad head in it, the meat was tough and hard all around it. I have found a lot of buck shot and several broadheads in deer I have butchered or skinned.

It is likely an injection site blemish. The meat industry has been trying to 2 decades to stop the injection of antibiotics into animal rears, and to encourage injection in the front chest area instead, where the blemish can be more easily trimmed away at processing. This goes for cattle and pork. But the practice continues. It is really hideous to hit one of those spots in a steak.
 
Just don't start injecting shots into the money muscle (where it sounds as if Mike is describing).
 
I believe as stated that it is an old injection site. I used to work as a Vet Autopsy tech and saw these areas often in large animals ( cows/pigs/ horses etc). Could have been some type of tumor as well, I'd bet injection site though, without pic's its hard to tell.

I doubt it very much,,If it has to do with food, someone has had the problem and a solution to it. Great bunch here, that's for sure...:mrgreen:
 
The pack the you picked up didn't by chance have a butt and a picnic in it did it? Sounds like the kind of meat I saw when I did a couple of picnics.
