Help with Pizza Dough

I'm gonna try grilling a pizza on the Weber kettle Monday while my ribs are smoking in the WSM. I have been looking around online a lot over the last few days to find a good recipe for my pizza dough.

I am not opposed to making dough by hand but I would love to use my bread machine for it. Any suggestions on pizza crust recipes would be greatly appreciated :)
 
I've never seen a mixer like that before. It looks like it's fun to use.
 
I use either dough from a local pizza place or bread machine pizza dough. Just google bread machine recipes and pick one you like.:thumb:

I have the same mixer...I bought exclusively to make pizza dough as I don't bake anything else... I did a lot of research before making the purchase, it's a very high quality unit and I recommend it.

Really simple and easy to make. Uses only a tiny amount of yeast, so it's really cheap to make. I tried it for pizza because I loved the no knead loaves that I had been making. I would suggest using a high protein flour and maybe kneading the dough a little before the first long rise. You'll have to add flour to it as you work it because it is very wet.

I like a soft dough for pizza.
 
Mine is a very simple dough which consists of starter, water, sugar, salt and flour. If you ever decide to go the starter route let me know and I'll post on the process.

Vinny can you tell me the model you purchased?
 
I absolutely love grilling pizza. I think going up to a local pizza shop and buying a NY style dough is one of the best ways to do this. I have come up with a cool little charcoal arrangement that presents medium low heat all around the pie without burning the center. See picture:

Every time I grill a pizza I do the above arrangement and it works well; the edges are crisp and the center is charred without overly burning. The key is a nice circle of coals with the inner area containing only a couple (about 8 as shown above).

I got my NY dough recipe from a pizza making discussion forum which I normally use on my pizza stone for phenomenal NY style pizzas, but it also works well for grilling.

I'm gonna try some pizza today myself. I found a bunch of good recipes on allrecipes.com. Are you using a pizza stone on there?
 
I'm not using a pizza stone on my first attempt. I'm gonna cook directly on the grill grate.

I got my two 12-hour work days this weekend behind me now and I'm planning to cook tomorrow... while my ribs are smoking on the WSM, I'm gonna do the pizza experiment on the kettle. I think I have forumlated a fairly simple dough recipe that I can make in the bread machine... It's as follows:

1 1/4 cup warm water
2 1/4 cups all-purpose flour
3/4 cup whole wheat flour
1 Tablespoon sugar
1 teaspoon salt
2 teaspoons extra virgin olive oil
2 teaspoons active dry yeast

I'm gonna make a simple pepperoni pizza as I try this for the first time. If I'm successful with it, I will make my next pizza in a cast iron pan or on a stone of some sort...
