That third one...wow, how many of those does he do in a night? Sooo many steps, plus I counted 19 hours under a fan....Deep fry the fins plus grill the fish and replace it's backbone? It's the details..incredible!
 
Sheer insanity (incredible insanity), but honestly just how much could that possibly add to the taste. Seriously, in my eyes, that ANYONE is able to afford such a thing speaks to the inequity in life.
 
All I know is I went to a movie in Japan once and instead of popcorn they had dried ell.
 
That is neat, but I also question how much flavor all those detailed steps like raking the sand at the bottom of the grill into a pretty pattern makes! (if you look the sand was raked before the wood was put in.).

Is this a ceremonial preparation method like the tea thing?

My inlaws lived on the water and thier neighbor would throw every eel he caught into a pot of spaghetti sauce.

The air he uses is to blow out the spinal cord, killing it quickly and keeping it from flopping around.

That's where I got these videos from. Explains how when fish get stressed or handled roughly there's damage to their muscles, which is to be avoided. Have a look, very interesting stuff. This whole cookingissues blog is really well done.
 
the unagi looks amazing.

everytime we go to the japanese market, we buy this 'charcoal grilled eel' that looks very similar to the this guys. it tastes incredible. eel sauce is like cocaine.

Ayu done with typical haute cuisine level care, meticulous.
Pity he didn't pierce the brain first and save the fish unnecessary suffering and increase the eating quality.
 
I am extremely hungry now... I love unagi! I wonder if I could do this with the snakes we find in our year? Hmmmmm.
