It started with the Easter Carne Asada found here:

This was a great idea for a TD and we enjoyed it very much. Leftovers can be even better that the original meal and I think this was!

The cook-- 10 lb prime rib on my offset stick burner, seasoned up and ready to go. Temp. 325 for 3.25 hrs., pulled at 120 and let it rest to 128 degrees. happy with lots of bark. Cut this bad boy up, medium on the end cuts, medium rare in the center to try and please the crowd. No pic of the sides they didn't give me a chance. The rest is rock and roll history. :thumb:

Wanted to make some Mexican food for Easter and wanted to do something different than Chili Rellenos this time. Since I just bought 2 dozen fresh tortillas how about Enchiladas? O.K. Enchiladas it is.

My finger is on the trigger, Think I will drool another day. I think sliding Billys , lamb looks unbelievable and deserves a hard second look. To many times people way over cook it. Damn got to eat a taco after looking at this. :wink:
