Fired up the ol traeger tonight. She fired right off and stayed put on 300 just like I told it to ;D
Did a go at my first bacon explosion but I put my own twist on it. My buddy makes sausage and we tried out this one, chicken and cheese poblano sausage, man it was good. Made the weave, made the log, seasoned with some southwestern seasoning from Adams reserve and cooked it to 16o internal. It was great but the bacon needed to be thinner, didn't render and I probably needed to cook a little hotter.
Stuffed with black beans, corn and jalapeño jack cheese
Glazed with my semi sweet rib glaze
Swish chard and arugula salad with a home made red wine and ancho vinaigrette
Also dinner from last night. Just some good ol stir fry. The traeger got a workout again, poor neglected little thing lol
