Meat man just dropped off a case of Chuck Rolls, gonna smoke em till they fall apart for my daughters Grad party on Saturday.

That is going to be some serious beef. I was planning on doing 4-5 briskets for my sons birthday next weekend, I'm wondering if maybe some chuck rolls like that wouldn't be better. I was going to slice the brisket for sammies, but it would be easier to pull those chuck rolls and have pulled beef sammies. I'm waiting to see how they turn out. Im gonna be calling a few butcher shops today!
 
Awsome... Although at first I was a little scared when I saw the propane cyl in the first pic.... Please post pics of the results if you have time. I love this site!

Haven't seen that before - those are some large chunks of meat. I'd sure be interested in seeing the during and after pics! Looks like that's gonna be some good eats!

Is that the correct name for them? I don't want to call the butchers and they not know what I'm talking about.
What temp will you be taking those chunks up to? Will you be coolering and then pulling? What's the process if you don't mind sharing?
