Started with a Tri Tip al trimmed and seasoned with worcestershire, gr garlic and Montreal steak seasoning.

Started with the tri tip indirect on the Kettle with Kingsford Comp and Mesquite wood for smoke, love mesquite on beef.

cooked a little slow to start with to give it a good smokey flavor. Cooked initially to 115 degrees, pull it off the Kettle to allow the coals to get hot, hot, hot, then on again to sear and get to the 130 range

If you don't mind me asking a noob question, how did you prepare those mushrooms? Every time I try to cook mushrooms they come out dry and don't have as good of a flavor as a restaurant (maybe I'm using the wrong heat?). Those look perfect!

I saute them over a medium heat with plenty of butter for about 30 minutes with an occasional stir, and in this case I seasoned these up with SM seasonall and some gra. garlic about half way through.
