I was lucky enough to take half of last week off for some cobia fishing in the Gulf. We got several nice fish up to around 55 lbs. And no, we were not anywhere near the oil spill... :-o

Last night, I took 2 fillets and seasoned very simply with EVOO, kosher salt, black pepper, white pepper, cayenne, fresh parsley and a squeeze of lemon:

Fired up the Primo and grilled for 5-6 minutes per side at around 400 deg. Served with some grilled corn and my favorite salad ever - tomato, avocado and Gorgonzola crumbles.

The fish was great. It's a good thing not too many people know about cobia or it might be extinct! :wink:

Yep, cobia is some good stuff. We use to catch them around the buouys off the coast of South Padre Island.
 
Beautiful looking fish. I have never tried cobia or seen it in markets.
 
Nice! I like the texture of that fish. Would love to try some.
 
Mmmm yup great tasting fish,, been a while sinced I had some of that...
