Baby backs from yesterdays first shopping trip to Restaurant Depot (Fantastic experience). Two pound Fatty (1 JD regular and 1 Hot) with onions, red bell pepper, pepperroni, and mozzarella cheese and one plain Fatty to slice and freeze. Ugly Dumb Smoker (wife's translation) held 250 all afternoon with one of three intakes wide open. (Credit to Norco for the design) The fatty was terrific but I'll probably be cooking 5 or 6 of them next time because everybody in the family wants to make one with their own special ingredients. Everyone said the ribs were the best I've ever done and I can't argue the point. Tender and juicy with plenty of flavor from the long (5 1/2 hr) cook. Baked potato and fresh cauliflower rounded out the meal. Credit to my youngest, Sandra for the pics.
