Gulf Coast KCBS Flavor Profile?
Hello Brethren,
I would like to ask experienced pitmasters like yourselves how do you think the flavor profiles judges are looking for differs from the Kansas City area as opposed to the Gulf Coast region? (haven't had BBQ in any other regions so i referenced these two area but feel free to compare any areas to the Gulf Coast area.)
