Ingredients:
1 lbs cooked macaroni
1 stick of butter
1/2 cup all purpose flour
1 German beer (I used a dunkle)
2 Cans of cheddar cheese soup (substitute velveta if you prefer, I don't like it)
1/2 A bag of Monterrey Jack, cheddar cheese cubes.
1 cup Sharp cheddar cheese cubes
2 cups pano
1 cup crushed crackers, whatever your favorite is.

Process:
Boil water and cook pasta, drain and rinse with cold water.

In the same pot, melt the butter

Add the flour and create a roux.

Then pour in the beer, it will look like you just messed up the roux, don't worry it's just the carbonation of the beer it will dissipate and reform.

Add the chopped onion and let the onions cook. See the roux is fine.

Add in both cans of cheddar cheese soup, stir to combine with the beer roux.

When combined and smooth, add in the cubed cheeses.

Once it's melted down add the pasta to the pot.

Stir and combine the cheese sauce and the macaroni.

Pour the pano into your baking dish.

Pour the macaroni and cheese sauce mixture into the baking dish.

Spread out the crushed crackers over top.

Bake at 350 for 30 mins, then broil at low for 5-10 mins, watch the top to see it crispen, and not burn the cracker topping.

I wasn't watching mine as closely as I should have, hence a little chard crackers.
