We had a marithon weekend of meat processing and smoking. 3 familys worth and about 350 pounds of meat overall. I did not get pictures of alot of the process because we were just to busy and couldn't take time away to take pictures. You will get the idea from the pictures we did get!
It was cold out - my fingers are still numb and I still smell like smoke!

WOW!! Old Skool SmokeHouse........ :clap2: Reminds me of One on my Grandparents Farm when I was a Kid - it was sided with Asphalt shingles over wood slats with cinder block base and Tin Roof.
 
looks good brother! What types of sausage did y'all do?

Mostly thuringer sausage but there was three different recipies, linguica sausage, and 6 different pepperoni recepies. There was Elk, Beef, and Pork. Some had cheese added, Cheddar and Pepper jack. Turkey of course and we ground Elk and bacon together for burger patties - some with Blu cheese added - It was very good!
