Dosent really matter whether you use foil or not. But if cant cook good Q with out it its a crutch. I used to tell people that you need to learn how to cook a good peice of meat. Then you can sauce rub foil etc to try and inprove it.
 
I use it because clean up is easier. If you like your Q use whatever.
 
I think Wife of HoDeDO once called it the BBQ'rs duct tape. It gets used on everything. I don't consider it a crutch, remember its the cook that's in control. If you consider it a crutch or not it is still something you have to know how to use and when to get the best results.

Obviously it get's used for the sides so there is always a roll close to the outdoor kitchen. As far as the meat, only for after it is off the smoker for cool downs. Have used it on Ribs before using 3-2-1 but I didn't think they tasted as good as going 4-5 straight up or longer. Poppy like's some bark on the Q....
 
I answered no because when I foil it never goes back on. I thought the crutch was when you cooked with it on the smoker after it hit the right temp. I just foil and toss in a cooler or an empty - unheated - oven.
 
I fall squarely in the camp of thought that it is only a tool, and should only be used after you can make good product without it.
 
What happened with me is, I went to smoking my spares for a straight six hours. I did it for several cooks and had good results. I did a change up and decided to go back to a foil with apple juice and some spices. It had been a long time between crutching and non crutching. The response was overwhelming. The consumers, of my hard work, loved the tenderness and flavor that the apple juice and spice imparted combined with the flavor of the pork. I went 3-2-1 and I'm convinced.:-D
 
For briskett the crutch is the best way to get the juices and make an au jus. I woudl always use it.
 
I'm the first thing that comes to mind with the mention of foil :confused:

I don't bring it up unsolicited - That being said, I'm a live and let live kinda guy. If you want to steam your meat and it works for you, go right ahead. For the period of time it's wrapped up, you might as well have it in one of these

I didn't realize I can put butter honey and brown sugar in one of those and totally surround the ribs with those loving ingredients. Guess i better try the wifes steamer for Q. And for the record you can foil without a full seal.

Yes - There are varying degrees and interpretations of foiling. There are those that wrap in foil after cooking (which I do not consider foiling as a cooking method), or foil boat/pan during the cooking process and then there's the method of tightly sealing you food in foil so as to trap the steam and other simmering juices. Which kind are you??? If what your cooking is surrounded by liquid that is simmering/boiling does it make a difference that this is happening in a smoker crock pot or on a stove top, I think not. You can get great ribs/other BBQ meats by foiling, I don't dispute that, and it's a sanctioned acceptable cooking method; but alas, it's the kissing cousin of boiling and as a group, we seem to disdain boiling.

Yep - Many a fine piece of fish has been steamed in parchment paper. In a pinch you can always use a brown paper bag :roll:

Any chance we can get a definition from someone of "On Topic" means?

Our On Topic posts are continually getting deleted.

Example.

I fully believe in my heart, that using the "Texas Crutch" (read: ON TOPIC) is Cheating, plain and simple.

So I post that. Using foil is cheating.

One Hour later, deleted

Now I am NOT questioning a moderator (moderators even).

I just think there needs to be some basic level of understanding of what is on topic.

If I posted that foil is cheating in Competition, I'd end up banned.

So is using foil Woodpile? D&R? Weight Loss?

I don't get the capricious nature that this thread has been torn apart?
 
Bill - I think the answer is pretty simple...

The original question was about the merits of using Aluminum Foil for BBQ. Q-Talk, as we all know should be about valid discussion of food,equipment, processes etc.

I just looked at the majority of posts deleted by the other mods and I agree they went well beyond two or three topic posts. While funny and entertaining, they overtook the intent of the original question making it difficult for someone to find value within the thread.

If you want to start a comical thread about foil,Woodpile would be ideal.:wink:

My wife took Paul Kirks cooking class and he used foil also. Don't let him kid you.

Paul Kirk is all about sauces and rubs, I am proud the TX crutch came from TX, it works great, plus speeds up cooking and keeps the meat moist. I wouldn't do it any other way.

Funny thing is the folks on the cookshack forum bash the so-called crutch. They just have a moister enviroment to cook in. If they didn't they would probably be calling it the OK crutch.....
 
My dear Brother Bentley introduced me to a new cooking term, "Tx Crutch". Never heard of it before today so, I Google'd it and was educated. I would like to know the Brethern's feeling on the subject. How about a poll?

Well, here is the first post. To say foiling is cheating would not bother me personally at all and IMO it would fit into the original part of the question "I would like to know the Brethern's feeling on the subject". I did not see that post.

The deleted posts that I saw did not address the question of using aluminum foil "Texas Crutch" in a serious manner.
 
our moderators are more than capable of knowing when someone is serious and when others are just pushing buttons or messing with our heads.

Why would sand or a clay pot be considered cheating? If one were to put apple juice in a WATERpan would that be considered cheating also??? In my eyes as there's no gas it's not considered cheating...
