Got some spares, trimmed St. Louis style, on the XL with Simply Marvelous Pecan Rub. Going in foil now, half way there!

Hrm. Haven't tried the pecan on ribs yet. It is fantastic on everything else though!

As far as time & temp, 250° +/- 10° with the 3-2-1 method, kicked butt I tell ya'.
