I have had this chicken and rice dinner that I have made for the past 10 years or so and have always thought it was good enough to make for others as my friends in college used to ask me to make it for them from time to time. I cut up the chicken into bite size pieces and marinate it in italian dressing, seasoned salt, seasoned pepper, minced garlic, worcestershire, cut up red bell pepper, and crushed red pepper overnight. After its cooked I mix it into any kind of in the box wild rice mix like uncle bens or zatarains. The first time I made it for my wife(got married 2 years ago) she was hooked and said it was by far the best thing I make.
Tonight's cook upped the level of this meal by quite a bit....instead of grilling the chicken like usual I decided to cook it in my newly built Mini WSM Gold with some apple wood at 425 on a 9 inch pizza pan I drilled holes in. The result was amazing! Only took about 35 minutes to cook on that neat little smoker. I couldn't believe the difference in taste and how much better the meal has become. I have now been told that cooking it any other way is unacceptable lol.

:clap2: Looks phenomenal! Great idea of the pan to hold the chicken.

How do you have your mini set up, do you use a terra cotta pot?
 
nope....no pot lol....i have the steamer tray that comes with it...but i didnt use it for this cook as it would have been redundant with the pan i made...i actually havent used the steamer tray much at all to be honest...maybe one chicken breast cook but ive been doing all cooks without it since

yessir! the more i run it the easier it gets...more and more partial burnt to start i think is the key....it was up to 450 within 5 minutes of me putting the pot on...which was 10 minutes after i put 2 cubes in to light it
 
Looks good J! Have you done any low and slow cooks on the mini yet?
Oh and you gotta get OU painted on the side of it if you haven't yet!
 
Man, that's the goods right there.....I could eat like that at least once a day....even leftovers get mixed into rice concoctions like that, but I bet your first run is a home run !!!!
