I've been on the Paleo (a.k.a. Caveman) Diet for the last three months and have lost 45 pounds so far. This stuffed chop recipe I came up with is one of the best so far, great even if you're not on a diet!
Brine was pineapple juice, salt, apple cider vinegar, honey and water.
Stuffing was grated raw cauliflower, mushrooms, onions, egg, almond flour, parsley, salt and pepper.
Cooked in the BGE at 350* until the IT reached 145*
Served with roasted Brussels Sprouts drizzled with EVOO salt, pepper and garlic salt and unsweetened applesauce with a shake or two of cinnamon. Absolutely awesome!
