begin with a small batch of polenta (1 cup polenta, 3 cups water, salt), after it simmers for about 25 minutes, add a cup of parmigiano. Spread out on a sheet of plastic wrap & refrigerate till it stiffens up, cut into small pieces & pan fry. Use as a topping along with a little la bomba:

Looks fantastic for pan frying but whats it have to do with bbq? Was the pizza done on the grill? Looks great also!
 
Nice looking spread. Polenta is on my cooking bucket list, you make it look very do-able. Thanks!

I don't suppose the pan frying has anything to do with bbq, but the fried polenta was used as a topping for a pizza that was baked on the grill.

no need to wait, it's really easy. I usually make it much thicker, like this:

then you can either fry it or grill it:

fry it on the grill by using a little foil:
