I have a J-3 with the boiler door. I cooked 6 butts last Friday and the outside temp was about 30 with 5-10 mph winds. I lit the 2 lbs of lump charcoal with a looflighter (first time to use the looflighter). After the charcoal was burning, I added a few sticks of apple wood. It took almost 2 hours for it to get to 275. I had to use to looflighter during the 2 hours to get it to temp. Once it reached temp it stayed on 275 with little effort. This is only the 6th time I've cooked on it. Once you get it to temp it is easy to maintain. Only the firebox is insulated.
I usually use a "wax" starter stick to start the charcoal. I don't know anyone that uses lighter fluid in a Jambo.
