I used some of the smoked chipotle pork butt from the other day...

Blistered and peeled some chilis....

Shredded some of the smoked pork and mixed with minced onion and some campesino...

The chipotle smoked pork rellanos were tasty.... I only tried one beer, the Tecate, but it went well with the rellanos. Looking forward to trying the other beers this weekend. :wink:

Nice! Relanos are one of my favorites! Try Negro Modello once you have finished your current supply of Mexican beer!

I figured you had something good planned for that butt, besides the tamales. Beat the whites, add flour, then fold in the yolk? They look great Jeanie.
 
good looking rellenos, Jeanie. Did you top with your tomato sauce?

I agree with Ron - give Negra Modelo a try ( have not had one since yesterday with a chile relleno) - it is dark and somewhat similar to Dos XX Amber.

Paul, you are right, I whip the whites, then add the flour. I fold in the yolks to keep the batter light and fluffy.

jlh, I forgot to post the sauce ingredients.

I saute some onion and garlic in a little bit of oil, then add.
Add 2 cups of chicken broth
1 cup of tomato sauce
1 tsp salt
1/2 tsp pepper
1/2 tsp oregano

Simmer for 10 minutes

It's easy but adds a lot of flavor to the rellanos.

I'm looking forward to trying some more mexican beer tonight. :)
