Planked Salmon, Butternut Squash, and Bruschetta!

Mrs. Brisket requested bruschetta and some salmon. Who am I to say no! Besides a little planked salmon on top of some bruschetta is a really good combo!
Saw this thing at Albertson's. Was tempted to try it, but I'll wait till they drop the price a bit more. There's a fire starter wedged in the center. Says its Birch! It's a portable bon fire as the tag stated.

Drizzled with a bit of honey, salt, pepper, and garlic butter seasoning. The other mixture is the citrus glaze I'll add to the top: parsley, capers, pomegranate, lemon and orange zest and juice, garlic, salt, pepper. IT WAS REALLY GOOD!! Very Christmasy!

Made some fennel for me. Kids found out that it's the "licorice" food! I guess I'm STILL the only one in the house that likes anything licorice flavored!:biggrin1:

I was also telling my wife that growing up, the only "squash" we ever had was Mexican Squash and Zucchini. Like most people, we though acorn, butternut, and spaghetti squash were just............holiday table decorations! LOL!! I love a good roasted buttery squash!

The pomegranate had a nice pop and worked well with the parsley and capers. It was a big salty vs. sweet flavor. I also added some coarse mustard. I forgot to add that. It added flavor too. It was a great combo with the bread, mozz, and the tomato and basil!
