Saturday I picked up a couple of slabs of St.Louis spares and smoked them on my Midi-WSM. The Midi uses a 16-gallon drum on the Smokey Joe instead of the tamale pot (mini-wsm).
I only used dry rub, hung the ribs in the smoker at 300°F for roughly 3.5 hours. They came out nice with a good bite to them, just the way I like them. Thanks for looking!

I'd hit those ribs!:thumb: How do you like the drum sitting on the SJ, pretty stable?

Looks like there was no problem with the ribs burning, being so close to the charcoal. How much clearance was there?

I've noted this before, there is some blackening at the tips, but no dry out.
I always end up with at least 3 inches of clearance depending on the length of the slabs. The drum body itself is 27" tall so there's plenty of height in there. :)
