Full Fledged Farker
Started with this 8.8lb pork shoulder butt.
Seasoned it with this Butt Rub. Wrapped it in saran for an overnight rest.
Woke to a beautiful morning in Wisconsin.... cold, butt beautiful.
Got the Weber Smoky Mountain cooker fired up...
Apple and cherry wood for smoke.
I put an additional rack over the butt in case I wanted to add some hors d'oeuvres... butt i never did
After six hours or so...
Meanwhile, I made some Bacon Corn Chowdah. Borrowed this great recipe from right here.
Everything I've seen Jeanie make is remarkable. And her chowder is no exception.
0h Wait! Gotta check on that butt!
Two degrees away from target temp is good enough for me. Let's lookie see!
0hYeaH! She's Done! And look at that wonderful foil bucket of drippings!
That's gonna make some outstanding homemade BBQ sauce.
Wrapp'er up in foil and cooler her for an hour at least.
Now, back to the bacon corn chowder...
Added the bacon right in the chowder pot...

Time to pull the butt...
