Sausage question

OK..I know that I am opening a whole can of worms here, but here we go. Every time I smoke sausage(Polish or Brats) they come out all wrinkled. What can I do to keep my sausage from wrinkling?

Go ahead, take your best shot!, but it is a serious question.
 
Rub hehehehe with oil hehehehe & smoke about 2 hours.

Phew...I did it.
 
How close are they to the heat source? What temperature are you smoking them at?

When doing sausages I like to bring the temp up to around 200, but nice and slow so they start out around 100 and spend a bit in the mid 100s.

What temps and times are you using to get those wrinkled sausages?
The only time I have seen that is on the grill at high temps and I expect that.

Are you using sausage with a high fat content? Wrinkling can be a symptom of the filling being real fatty or cooking at too high a temp.....
 
Simple. Just don't cook them as long or at as high a temp. or both.
 
Before I cook my brats I make a bath of beer, onion, and garlic and put it on the grill. When I'm done cooking the brats I put them in the bath. This way I can cook them ahead of time and opens up grill space. This typically keeps them from wrinkling also. Nothing like a brat with a beer soaked onion.
