If someone told me 5 years ago that I'd be catering a wedding... I would ask for a reality check. Well... had to eat those words; just completed my first wedding reception for a repeat customer - for his daughter.
Smoked 12 whole porkloins - and manned the slicing table for the buffet lines. Apple-smoked with Simply Marvelous rubs (4 -cherry/ 4- Spicy Apple) and 4 with Montreal Chicken.
Each table was manned by BH Tennessee Red. :wink:
The smoking section and food buffet line.
The bridal table under the main pavilion - with an evening bonfire planned.
Sorry - this is the best of the pron... was as busy as a one-armed paper-hanger. After I was done slicing - all was left was the montreal spice rub. The guests could not stop eating the BBS' spiced meat. :shock:. Coming back for seconds became the norm for the evening.
Was all too happy and honored to serve for this blessed event.
