It is dark thirty here on the west coast. Today is my wives birthday! So I am cooking up a big party I lit the UDS about half hour ago. I am going to cook two 7 lbs butts and two 10 lbs briskets. Thanks for the tips I got from all of you! I hope it goes smoothly. I have cooked a great brisket on my first UDS and hopefully today I will not be slicing the pork butt with a red face wondering will I ever get one of these pull apart tender. Today is the day!!!!

Check out the lid vent on my UDS.

Good luck to you! Love that vent by the way, what is it made out of aluminum?

The lid vent is aluminium sheet. I get scraps from my neighbor he is a welder. I am a woodworker but lots of my tools will cut aluminum. The pattern on it I cut with my ornamental lathe it is home built also.

Beautiful work on the vent! Almost too purty to get grease all over.

WOW, Looks good! Happy birthday to your wife! I am sitting in backyard as of now with a 9lb shoulder on! Hope mine comes out as good as yours!
