How to BBQ a 5-Foot Gator

Anyone else concerned with stuffing the alligator? I always understood not to stuff a turkey if you were doing low and slow as the risk of food poisoning was too high. Am I offbase, and concerned over nothing?

I don't think there's a samonella poisoning problem with gator. I think there is a strong "taste like shoe" problem with gator. Plus the cavity is really thin with the bulk of the meat in the tail. So stuffing it might make sense so you get the tail done without the rest of it becoming jerky.
 
The reptiles were captured and turned over to the Nassau County Emergency Services Unit. They will be sent to a reptile sanctuary in Florida.

What a waste of good gator. Stephan & I could have threw them both in my pit.
 
Entertaining as always, but gator is lean meat and they cooked that thing to death!
