Hey all,
I got my Cyber Q a year ago and never used it. haha. i couldnt figure it out.
I read and read. I thought my unit was defective. Well, the post a week or so about the weather proofing box got me thinking about breaking it out and figuring it out. So I did.

Made the box and hooked it up.
Worked like a charm.

Then I had my 19 month old do my prep for me.

Thanks guys, that's Lilly. She's gonna be a bad mo fo on the Q in a few years. haha.

So I went to check the temps. Rollin along at 250. The guru is working like a champ.

After that, I figured I'd do my brisket prep for tomorrow.

Actually it is tomorrow already.
I decided to just do the flat. I usually just throw the whole thing on there, but for some reason I didn't do that today.
I saved all the fat. I'm gonna do that au jus thing with the fat on the rack under the meat. I'll see how that goes.

When I wake up, this baby is goin on.

The butts are 170 give or take a few.

oh and by the way, i dont remember who posted the toothpick trick, but it is a great idea.
i'm all over it. thanks!
 
First you have such a cutie there. second doesn`t Ohio have child labor laws there?????. I have to agree with the toothpick trick its a great idea.

got up at 6am and took the butts out.
wrapped em in the stuff patio daddio posted the other day.
apricot nectar, apricot preserves, honey, butter, ect..
let em sit a little long, till 9am. i was tired.
Lilly was yelling at me about the "meat" so I got up.

after that, i got the brisket in.
notice the fat pan on the bottom rack. cant wait to see the results of that!

What's your injection mix?

plain ol butchers dustin.
i'm trying to decide if i like injections or not.
it will be a year long experiment at least.
i've only injected a few briskets. i need to not over cook them to find
out if i like it or not. i've over cooked every injected brisket i've made.
non injected are turning out awesome lately.
we'll see.
 
thanks brother. yeah i'm gettin one. Any young man that wants to take her anywhere will
need to come a half hour early to clean and polish it up. haha. that way we both know it works. hahaha.

at 12:45 we're into the 4th hour.
temp on the brisket is 120.

I'm glad that the apricot wrapping mixture worked well for you. Apricot and pork work
very well together.
