just for fun i'm going to try to build a box smoker out of wood! i'm going to use the same principals as a WSM only about twice as big. i can get these really large pans in a walbaums where i live in the spanish food section. they are pialla pans or something. i'll use that for the water pan. i figure i'll caulk the whole thing with heat resistant silicone and make a recessed door with that oven lampwick to make a seal. i'll put some fire bricks in the bottom with a habachi on top for the charcoal. i'll try to post shots and would be happy to get some advice, but the question is has anyone ever cooked with good results on some really homemade stuff like that? thanks.
phil

Just watch out with the silicone. And what kind of wood do u plan on using?

Seal on the outside only. Unless they make one that is food grade. ( ? ) Fiberglass rope they use on oven doors and woodburning stoves is available at the fireplace store in commack, its called the woodbox or firebox.

Made of wood? At what point do you hold the tongs in one hand and an extinguisher in the other??

I was thnking the same thing. Would not a cooker made of wood be burned by the fire you are using to cook with?

Not if its big enough.

Think smoke house.

They are made of wood

Stuff I've built cookers from:

Old refrigerator
55 gallon barrel
200 gallon fuel barrel
500 gallon gas barrel
electrical mains junction box (3 feet square by 5 feet tall)

Now I use store bought stuff. Less adventurous in my old age.

Fuel barrels??? I assume a big arse fire in it to start would burn off enough of the residue that you wouldn't get a bad taste on your food? Wow!

So where do you locate such a barrel?

I still like VooDoo's trashcan versions! I think Kevin said it only takes about an hour to 90 minutes to complete one.

I suspect it is steamed cleaned first

Plywood would give of all kinds of noxious fumes I'm guessing. Sounds like a cool idea, though, I say go for it, and post picts!!!!

And another thing, clean up would be a breeze cuz all you gotta do is burn the thing when you're done.

Sure ting, Mr. Bill, but he said "box smoker" which lead me to believe it was smaller.

I'd love to see how it comes out.

a small fire in a hibachi at the bottom, Buffered by a water pan wouldnt get hot enuf to start the wood burning. I was thinking along the lines of a JD barrel with shelving, nothing plywood, some form of wood barrel.

Seems liek a project for kicks, I still have the water main section that was going to be a smoker one day.... yeah right.. thats gonna happen.

I have two old metal file cabinets hummmmm I just wonder:biggrin:

Charlie, are they the insulated fire-resistant ones? maybe cut the bottoms out of the drawers, install expanded metal, use bottom drawer for fire box, make a hell of a vertical cabinet style smoker.8)
