That is one of the few advantages of living in the Pacific NW. Fresh salmon and halibut and rock fish. The eight months of rain and clouds sucks though, which is why we are moving back to TX when my wife retires in a year.
 
It's shredded beef mixed with egg or egg whites to make a little patty. Then pan fried in a sauce. Usually red.

Before she used to boil the brisket flat. But now she suggested we smoke it.

Really can't wait to see that! Love everything with eggs! Fried fish is double awesome.

What is the story behind the pan that fish was being cooked in on the Weber? It looks like a home-made type of set up..

It's a cast iron disc commonly found in Mexico. My mother in law got this for me 10 yrs ago. Over there they use wood to cook with it.
