Saturday is pork day. 15lbs (6.8kg) shoulder for pullin'.
Sunday is beef day. i have a 13 lb(5.9kg) cryovac brisket in my fridge thawing. i might try an overnight.
it's a three day weekend here, so Monday will be for resting, and leftovers.
Sunday...3 briskets, 1 for the family, 2 for my maintenance guys who helped me finish the welding on my RF smoker, 3 chickens split in half (trying some experiments on my Texas comp chicken) and a few sides.
I plan on a Brisket Sunday, plus a whole chicken and grilling some chicken wings for the family. I think I will smoke the wings first then finish them on the grill.
