Smoked and Braised Short Ribs

This is one of our favorite ways to do beef ribs in the winter.
Friday Big Al smoked a fatty, some pork ribs, and some beef short ribs.

Today I took said short ribs, and put them in a braise with...
Sauteed Onions
Sauteed Carrots
Sauteed Garlic
Sauteed Mushrooms
Thyme
Oregano
Rosemary
Thyme
Red wine
Beef Broth.

They are now all happy together in the oven, along with some potatoes I will mash and serve the short ribs over.

If you've never done it, give it a try. The smoke adds a little more depth to the dish, and as much as I like beef ribs straight up, this is a nice change up.

Here you go...

Out of the oven...
I separated the meat from the bones prior to it all going into the pot... but put the bones in for flavor...

Al used SM Cherry on the ribs when he smoked them, and that paired well with the rest of the ingredients.

D.r.o.o.l.i.n.g! Those look awesome. Care to share the recipe for the braise? I must try this!
