Buffalo Wild Wings sells a Salt and Vinegar dry rub. They sell bottles at their locations. Might be a good start to see the ingreidents.

one technique that I've seen but not tried, is to dip the fully cooked ribs in a water/vinegar mixture, then add more rub. I think this is used in Memphis quite a bit.
